Cook noodles following packet directions. Drain and transfer to heatproof bowl. Add small amount of oil to coat noodles. Heat oil in wok. Add chilli, garlic and shallots. Stir-fry for 20 seconds. Increase heat, add sliced chicken and stir-fry 2 minutes. Add prawns and stir-fry for another 2 minutes.

Thai Chicken Salad

Soak the rice noodles in boiling water for 4 minutes to soften. Drain, refresh in cold water and place in a bowl. Blanch snow peas and beans in boiling water for 2 minutes until just tender. Drain, refresh in cold water, then add to the bowl of noodles with the spring onions, cherry tomatoes, herbs and chicken.

Pad Thai

Cambodian Spicy Coconut Fish

To make paste: in a blender, add lemongrass, kaffir lime leaves, galangal, onion, garlic, chillies, coriander, capsicum and water, and blend well. Pre-heat a large skillet, add oil.
